Diabetics need to limit carbohydrates to control their diabetes. For example, rice is a staple in many cultures. We suggest substitutes such as quinoa which has higher protein content than other carbohydrates. We suggest using raw lettuce as a “wrap” for sandwich meat or other sources of protein. We recommend using a smaller dinner plate or dessert plate so that food portions look bigger and more appetizing. A nine inch dinner plate is suggested rather than a twelve inch dinner plate. For birthday celebrations for Type 1 Diabetics, we suggest angel food cake and small portion size.
