Green leafy vegetables, such as spinach, kale, and collards, improves eye health and cognitive function, according to Dr. Elizabeth Johnson, a scientist at Tufts University Antioxidant Research Lab at the Jean Mayer USDA Human Nutrition Research Center on Aging.
